The Everyday Muffin

A simple yet tasty muffin for everyday.  These gems are made with coconut flour and have no added sugar or sweeteners.  Pure, clean, and a great tasting treat with a just the perfect muffin texture.  A snap to put together and they bake up really nice.

Paleo Banana Muffin

3 eggs

2-3 mashed bananas

1/2 cup melted coconut oil

1 tablespoon vanilla

1 cup shredded unsweetened coconut

3 tablespoons coconut flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon salt

2-3 teaspoons cinnamon

1/4 cup mini dark chocolate chips (if desired)

Combine the wet ingredients, add the dry.  Spoon into a sprayed 12 muffin tin.  Bake at 350 degrees for 12-14 minutes.  Store in airtight container in refrigerator.  Enjoy!
